Considering the average lifespan of a cat if you got one when the movie came out, and kept getting another when one died, you'd have gone through around three cats by now

Yes, we can. The oldest housecat on record, one "Creme Puff", lived for 38 years. It has been well over 38 years since Alien was released, and add on an extra year for the time of actual production-filmmaking. Now add on top of that the cats (that's plural, CATS) were not kittens, but all at least young adult animals, so maybe a year or two minimum, however cats work. There's a dim shot of one animal on the floor as Ripley mulls over SEIU (the translator bot), and to me, that medium shot looks like a slightly younger animal, but it's hard to tell, the light is usually pretty dim on Jonesy.

Furthermore, consider the following: if some individual animal was known to have appeared in a famous and well-liked film, and if that particular animal lived into extreme old age, this would have been publicized. Since it hasn't been, this taken together with the above means that it is very unreasonable to think that any animal that portrayed Jones (in the original film) is sitll alive.

At least a fifth animal appears to have been used in Aliens (a more "pointy" animal, is how I would describe that one, pointy ears, pointy eyes, etc), and there may have been a double or two in that case, but the animal scenes were a very light load in that case, and could all easily have been done by one beast. For Alien itself, a company called "Animals Unlimited" supplied four distinct animals, all tabby cats of similar appperance. It's unclear whether all four were used, or actually appeared in the film, but I imagine that at least two or three were used for distinct functions: the extreme close-up ("Fat Face", as I think of him), the calmer medium shots (this may be a slimmer animal), and the running shots where the animal is actually shown running away.

This appears to be a good production still, and I associate it with the above "SEIU" sequence, since it shows Ripley and the cat alone, as they are at that time on the bridge or thereabouts. I imagine that this animal is the one shown in medium frame around that point, and it may be distinct from "Fat Face". Or not, it's really impossible to tell them apart.

Just as I can't be totally certain that the person next to me is really a conscious being, that the sun really will rise tomorrow, etc. The "reasonable doubt" standard in a criminal trial is a good criterion here. If any individual housecat had remained alive, or was believed to have lived into extreme old age, for much longer than a current record, then we'd have heard about it, or it would have been documented. Especially if the animal was involved with a well-regarded and well-DOCUMENTED film production for a film that was well-liked right when it came out (Alien gained a following right away, it wasn't a "cult" film that came and went and slowly built an audience later).

I think I've mangled "SEIU" for whatever acronym Ripley actually rattles off in the film, which may instead by "ECIU", or whatever it is. The scene I've been referring to is detailed ONLY in the 1979 Original Cut, IIRC. The four-letter acronym, whatever it is, clearly refers to some sort of universal translator that tries to make sense of information. "SEIU" is some sort of janitor's union, or something, now that I think of it.
