Anakin basically realized he'd just ruined his entire life and his only choice was to go all-in with Palpatine in the hopes that he was telling the truth about being able to save Padme. Anakin basically went insane and the only thing that mattered to him anymore was saving Padme.

idk about disney cannon but in old cannon it's because Palpatine wasn't much of a saber fighter or even that great at force battle shit.
He mastered it in his younger years but was centuries out of practice. When he was younger he quickly saw the limitations of only dealing with what's in front of your face, and read history about how all the other sith lords couldn't be everywhere all at once, he became more interested in using the force for macro scale subterfuge and nationcraft.

I don't know what dumb EU writer put that idea out but it's contradicted by the movie itself. Mace is the best saber duelist and Palpatine barely loses. Yoda is the best Force Battler and Palpatine beats him.
He's pretty clearly the 2nd or 3rd strongest guy next to Prime Anakin depending how you count the Mace fight
Obi-Wan by the time or ROTS was considered a master duelist and Yoda still told him to go after Anakin because he felt Obi-wan had no chance against Palpatine.

I can never find the footage but I clearly remember Lucas in either an interview or a making-of doc saying that Palpatine did actually lose legitimately, but that he had already counted on that. He knew he couldn't beat Mace in a swordfight so his goal in the fight was just to hold his own long enough for Anakin to arrive.
It was a pretty big gamble, that Mace would leave Anakin behind but he would choose to come anyway.
