A rat was there because they are the most common lab animal. They were able to grow and incubate the virus without being part of the joining. We didn't seen any usual or enhanced rat behavior, we just saw a rat bite someone.

It could be extremely disruptive and harmful to Earth's ecosystems if all rats suddenly had to abide by the plurb's dietary constraints, plus if they were part of it then we should have seen them being put to work performing tasks

i was gonna suggest that maybe the rats exist as a separate hivemind, but it seemed like that very first rat was making a calculated effort to infect the human, so that can't be it
