The idea that GRRM hates traditional fantasy and kills characters to subvert expectations or to show how honor or heroism are stupid is the most midwit take on ASOIAF and the only way someone could believe it after reading the books is if they weren't paying attention. Every major character's death so far has served a clear narrative purpose and had obvious tragic themes.

Why does Ned die? Makes for a good story. That's why. Martin fucking took a two year break from GoT to create that dogshit Doorways TV pilot and only went back when it wasn't picked by the Network. I don't mean that being a good person is bad but Martin certainly hates the trope of the good prince/king that saves everything and everyone lives happily after. Being a hippie boomer and liking traditional fantasy are not mutually exclusive. In fact, I think George is stuck between the two: his late-20th century boomer politics on one hand and his love for the aesthetics of traditional fantasy on the other. I'm sure that he thinks that monarchy, nobility, and inequality are bad (at least in the real world) and he is trying to deconstruct them on some level, but the details of the setting reveal what he thinks is cool. Almost all of his characters are the highest or second highest level of nobility, so many characters are described as being 'beautiful' or 'tall' or 'strong', the lore is full of almost superhuman swordsman, various characters wouldn't be out of place in shounen anime etc. I don't believe he wrote hundreds of pages of fictional history in Fire and Blood as a manifesto on why monarchy is a bad system of governance. He clearly thinks white-haired, purple-eyed, dragon-riding superhumans are cool, just like he thinks that 6'5"+ warriors, and magic swords, and noble children who have a magical connection with their pet wolves are cool. Even Dunk and Egg, which is smaller scale, ends with Dunk reaching the highest level of knighthood because he's so strong and noble. George might well try to end the series with some kind of progressive message where Westeros embraces feminism and liberal democracy but to say that he 'hates' traditional fantasy is just wrong. At best he's stuck in a contraction that he doesn't realise.

Aegon the Conqueror converted to the Faith of the Seven. The Faith rebelled under his sons, and Maegor tried to brutally supress it. I say tried rather than fully successful given King Jaehaerys basically negotiated with the Faith to finally end it. It was agreed Targaryens could only have 1 spouse at a time but, they could practice incest. From what we see in the show Daemon and Rhaenyra married in Valyrian tradition, but there is no proliferation of the religion into Westeros or syncretism with the Faith. Unless sticking to the Valyrian religion somehow keeps dragons*, it is just logically to convert to the Faith for politics of legitimacy. *which there does not really seem to be: confining dragons in small spaces seems to be what stunted their health and the Dance killing off thd population rather than whatever religion they followed, there seems to be perhaps the reasoning for incest being necessary but again all that is vague and can fall apart in how strong it actually is.
