I wonder why they haven’t started delving into remaking any of the sci-fi B movies of the 50s and 60s. A lot of those stories were actually pretty intriguing once you bring yourself to ignore the cheesy fx.

Probably lack of, or at leas perceived, brand recognition. Most things get remade not because they think they can improve it or explore a different area, they instead get remade because they think they can trade off the recognition that comes with the name.
