Thematically, aesthetically, everything really. I still watched them all a few months ago but man I got bored by the time i reached Rogue Nation. First 3 movies all share the same few fundamental elements, but in terms of everything else, they feel distinct from one another, 2 being my favorite (man that fucking OST by Zimmer and the other licensed songs; and that brown chick). Not the worst rehashed series of movies, definitely more consistent than something like F&F which went through a complete tonal shift around the 5th movie, but i still think it should have ended already.
