Because he used a specific style of lightsaber form that's more similar to fencing. And also because the concept artist who came up with the design is from the Philippines and brought in a bunch of swords for inspiration and George liked the curved handle of the barong. It's also been stated that Christopher Lee strongly preferred it because it was more comfortable for him to hold during the choreography due to his arthritis. He was also a master swordsman so he probably gave a lot of input with it as well
