In the real expedition, why did the captain die so early? He was the best fed and cared after man there. And why didn't they state state the reason in that letter?

Older people are more frail. By the time you hit 30, you're on a downward slope. He probably had to "voluntarily" lose his special food privileges due to the circumstances they were in.

Franklin expeditions is one of my all time favorite stories.

Then I am going to have to guess suicide as my second guess. I don't mean to take anything away from him. suicide in their situation was probably a rational move giving what we know now.
They were truly doomed.

If you want to pick your spirits up. I'd recommend reading Endurance/about shackleton expeditions
where being trapped in the ice as while but they somehow all survived. One of the greatest human survivor stories.

They left a note indicating his exact death in the cairn at Victory Point.
They got stuck in the ice in September 1846.
Franklin died in June 1847.
So he lasted less than a year once they got stranded.
The fact that they didn't indicate his cause of death on the note always seemed kind of weird to me.
But I think the most likely cause is his sickness. He was a 61 year old man and the flu is brutal.

Also of note is that it was mostly officers that died first.
I've read theories that the officers were eating more food and succumb to poisoning faster for that reason.
The show used this to its advantage by making Tuunbaq target leadership specifically.

He wasn't the Admiralty's first choice for the expedition, but as they went down the list men kept bowing out for one reason or another. As other anons have said Franklin was old and past his prime as an arctic explorer, but wanted to go to redeem his reputation which was suffering after a stint as governor of Van Diemen's Land (Tazmania), which is a whole interesting story in itself.
I vaguely recall reading that Franklin had to get a doctor to vouch for his health before the Admiralty would sign off on him.
