I’m not saying SE Asians don’t have any sort of internal monologue but they definitely have a very different version of it than people who in more civilized areas (no, regimental complacency is not civilized by the way). The term itself probably means something entirely different to them.
>>
Spending 10 years learning how to make an omelette is how japs suddenly find themselves lagging behind in everything in every industry. It's why Honda makes a Formula 1 engine and it's an self-destructing abortion that can't last more than 20 laps because they weren't afforded 10 years learning how to design a new F1 engine, while Red Bull (a fucking energy drink company) nails a good engine in their first try.

My brother is a professional chef for a very nice place in New York. For our parents anniversary we had a party at his place and he cooked steak for us all.

I'm just going to say it, steak doesn't taste that good. Making it bloody doesn't improve the flavor, it just makes the texture gross. Dry aging adds "funkiness" and makes it taste different to people that eat steak all day, but that's gross too. Wagyu steaks are filled with fat and I hate fat on my steaks.
A1 sauce on the other hand, I could guzzle from the bottle and improves virtually everything you pour it on.

it's more like drowning your prime rib in ketchup, sure you can do it and in the end it doesn't matter but why not just get a cheaper cut at that point? If you're getting high-grade sushi it makes sense to eat it in a way where you're getting the intended effect of the dish rather than just tasting 90 percent onions sauce. But yeah, you can eat it however you want since you're paying for it, it won't get more than a raised eyebrow from me, if the chef doesn't like it he should've picked a profession that isn't service oriented.

I'm always surprised how ignorant the majority of people are when it comes to cooking. I'm not even a working cook/chef. I'm just a home cook. I get tired of paying a premium for mediocre food when eating out so I've spent some time trying to learn and improve my own cooking. A lot peoples taste is just super basic and childish. I don't understand how willfully stubborn people can be about trying new things or cooking things that are tried and true methods... shit that isn't even bizarre or weird. Morons will look at a risotto and be suspicious that it's made out of maggots and eyeballs. My girlfriend will make chicken and dumplings with the crockpot which is fine but she insists on using boneless skinless breasts and I'm like "what are you doing?" She acts like I don't know what I'm talking about when I tell her we should save those and use thighs and/or drums instead. Both of our moms eat their steaks well done. Her mom was making steaks one time and was slicing them in half to check the temp and I was all "whoa hold on, do you have a meat thermometer" and she was all confused like why would you need one of those? I'm not going to hate on people for using A1, the main problem is that you're shorting yourself so many other options. Blue cheese, herb butter, horseradish... or if you're doing flank or skirt steak you have all the mexican flavors etc. So many different options. A steak should theoretically stand on it's own if it's really good though.

It’s more just being autistically collectivist to the point that any expression of individuality or deviation from The Way Things Are Done is seen as impolite at best

>>218416217
It's ultimately a gerontocracy. All the old people agree that it has to take a million years to learn anything so they can gatekeep all the young people out of respectability and starting their own business. It reduces competition. You'll have an old potter having an apprentice spend years cleaning the studio, and then several years just learning to wedge clay without actually making a teabowl. They could have developed an entire skillset by then. I have news for you, those teabowls aren't that hard to make. When they finally ascend themselves they just do the same shit because they think "if I had to do it, then I'm going to make the next ones do it too."

This guy doesn't even know that Sushi was considered Japanese "street food" only a few hundred years ago.

Japanese Workers would quickly grab pieces with their fingers from their stalls and eat them quickly during breaks from work. That's why it's shaped and cut into bite sized pieces.

Sushi only became "exotic expensive food" when they exported it to America. They wanted to sell it to Americans and Westerners. So they rebranded it.

Yeah no shit they bought it, Americans will buy literally anything if you wrap it in “ancient tradition” and a minimalist font. Slap a couple kanji on the wall, whisper about a 200 year old onions sauce barrel, now it’s $300 per head for fish and rice.

It’s not even about the food at that point, it’s about vibes. Same reason people line up for “artisanal” toast. You market street grub as a spiritual experience and consoomers eat it up (pun intended).
