Well, Marco Pierre White was the youngest 3-star Michelin chef in the world and Ramsay was under his tutelage. Then the UK released two programs portraying Ramsay as a piece of shit boss. The latter is one is called Boiling Point you can find it easily, nobody can find the earlier one. These shows gave him public awareness in the mainstream and the thing about foodies is that they will do anything that is worth talking about and obviously Ramsay is THE most famous chef in the UK.

The positive impression came when he did his first show in the US. I don't know what it was but the point is that once you get something in the US, it gives you credibility to get more funding for future projects and that's what happened. After his first show Ramsay just kept on getting more and more shows and appearances on everywhere, and likewise in the UK, he became the most famous chef in the US. You have to remember that before Ramsay, nobody in the US knew a chef by name other than Julia Child or whoever was on PBS but Ramsay was a celebrity. Even today nobody knows who Marco is. Nobu brought sushi to America and nobody knows who he is.

I think what mattered was that Ramsay was an asshole, and being an asshole has become vogue in reality TV and in society. People like a straight shooter and Jacques Pepin is simply a nice guy. Ramsay validated a lot of peoples' opinions that it was okay to call (good) food shit.

What are you talking about. Bones and root vegetables cost pennies. Tray of demi-glace will cost me $5-10 and it will last entire year, because usually I just use fresh stuff. Not like it is even necessary in overwhelming majority of dishes, because richness of flavor is usually just a matter of preparation.

This has driven up the price of a product that NOBODY BUYS to the point where if I wanted to make a stock I have to dump $50 of useless beef parts into it.

I know what you mean, beef scraps used to be practically free. They are not anymore and haven't been for 20 years. By the time I'm done the stock and espagnole I'm going to be out at least $100 not including the energy. It's not time or effort, it's sheer fucking money. 3. you have to manage to focus for the time it takes to make said food, without screwing anything up... sounds easy but most people can't focus even for 30 seconds without drifting off
