that's not how things work

For him the natural order of things is that he's smarter, more capable and a better grade of human than Jesse. Therefore Jesse needs to be under his thumb. That's in addition to seeing Jesse as a son he never had (due to his own being a cripple, which again clashes with his egomaniac perfection self-image).
Jane was a threat to this orderly way of things and on top of that he saw her as lowlife junkie scum.
There were two options. He saves Jane and she continues to exert influence over Jesse and (in Walt's mind) they continue to spiral into addiction, thus both ruining his plans with Jesse, but also both of them becoming full blown junkies.

Or he lets her die, which means Jesse will again look to Walter for guidance and mentorship, which strokes his ego.

Eventually, maybe. But at that point it doesn't matter because the alternative for Jesse was to get tangled up with more murderers who would kill him the second it became slightly beneficial. This is what happened to Jesse, as he was going to be murdered by Jack's crew once he outlived his usefulness. Yeah, good job saving him from OD'ing.

If you mean she was going to choke anyway and Walt merely didn't save her, that's wrong. She started choking because Walt knocked her over trying to wake Jesse.
