The Mexicans seemed really fratty in the kitchen, always amused me. Favorite guy i worked with was a Russian who always drank 1-2 shots of Vodka in a Stella at the end of his shifts. I'm glad I'm out of the restaurant industry now though. Very unhealthy environment. Lots of drugs and alcohol floating around the staff at every place.

Servers would make $15 an hour + $33 an hour in tips (or more or less, but I think that was average for peak season). I made $22 an hour, and something like $2 an hour from tips. So $24 vs $48. You're a sous chef so you make decenter money than I did, but we were working very hard during what we were told was the busiest summer ever and I just felt this was too unfair for me to handle. To this day I tip 5% when I eat sit down restaurants because that's the max front of house ever tipped out to BOH, lol. I acknowledge serving carries some difficulties too, but I'm pretty confident I could do it while very few of the servers could handle serious line work. Also, we'd then have to do almost 2 hours of substantial cleaning after they fucking left.
