This seems even more likely now that Elden Ring is out and features a similar concept with the Erdtree.We know from the show that The Others/White Walkers were created by the Children of The Forest but there's still a great many theories. Most likely is that they're a weapon gone awry, there was some sort of pact to provide them with humans to keep them away, but now nobody remembers said pact anymore. They've been growing much more active since Jon was born. Maybe they're afraid of the union of ICE and FIRE and want to strike first.

AFFC and especially ADWD waste so much time with travelogue’s and pointless POVs (Areo, Oakheart, Trystane, Connington), yet there was virtually no development or appearance for the Others except for mentioning hardhome in a report at the end of Jon’s chapter before he’s stabbed. The show did actually one-up the source material here by actually taking Jon there like GRRM had apparently planned in an earlier draft. We basically have no build up for them whatsoever in the books thus far.
