Yeah non-chronological storytelling has always been a cheap gimmick that feels cool maybe the first time you've seen it, or if you're easily impressed.
I realized films like Memento and Reservoir Dogs become flat and mediocre if you watch their chronological edit. They basically just rely on the "reveals" in the latter half of the movie, which is literally just them witholding previous information and pasting it at the end.

This is a good point. The movie was originally just called "Star Wars" and was later renamed to "Star Wars: Episode IV – A New Hope" when it did better than expected and sequels were approved as a cash grab. It's a complete story on its own, basically a riff on Dune and the Hero's Journey archetype. Keeping that in mind, ESB and ROTJ feel more like they're just tacking more drama and battles on to the completed story in pursuit of popcorn blockbusters.

The big reveal at the end of Empire is already known to chronological watchers by Episode 3. You know Obi-Wan is the best duelist in the galaxy so there’s no sense of danger in episode 4. You’ve seen lightsabers so Luke getting his is just okay. Han’s sex scene with Jabba was already mirrored in Episode 1 so it just falls flat. Etc.
