People want droids in recognizable, relatable forms such as humanoid. They can speak to them, be similar size, walk with them through hallways, etc. Then that droid can go take its directions and perform tasks elsewhere. You can't talk with a giant tank droid in your spaceship. It just hangs out in the cargo bay or out on the field. It's way cooler seeing big transports deploy thousands of terminator like bots that walk towards the gungans shooting while the tanks blast away from afar
