I didn't like any of those things in Phantom Menace either. That said Anakin is set up as a Mary Sue to emphasize how tragic it is when he fails at everything. Rey is set up as a Mary Sue so you know how awesome she is when she saves the galaxy solo using her girl boss powers.

I didn't hate her. Just thought she was pretty bland and boring. Admittedly Luke wasn't anything special either, and his story was only really interesting in Empire Strikes Back. But the supporting characters made up for it a lot.

In the first movie she didn't really have a personality other than being really skilled at a lot of tasks. In the second one she just moped on an island the entire movie, and the third one I never watched.

"Made a junkyard bot that only partially functions" and "parlayed junk pod piloting skills into starfighter piloting skills assisted by an astromech droid" isn't the same level of sue-ism as being able to instantly use higher level force abilities and wield a lightsaber about 10 minutes after you first hear of such abilities being possible and instantly fixing a gigantic war ship in a way that not even the 80 year old man who basically rebuilt the damn thing and spent decades taking care of it could do.
