Sometimes that phrasing is for the benefit of the audience because yeah, being a brutish warrior he might not know exact medical terminology, but he's still a smart guy who's lived a long time, is well traveled and seen many battles, so it wouldn't be completely out of the question for him to know what a nervous system is especially in a fantasy world.
