This stuff matters, because you're basically setting up the child for the rest of their lives in those early years. You're teaching them life lessons, and you're teaching them to appreciate art and storytelling (which also matter).

Wasting an hour of the plot in a CGI casino, finding a character who would never appear again and failing to accomplish anything, ultimately having no bearing on the plot what so ever.

I remember Peach being in a casino for a few minutes, not half the fucking movie. And she was there to get information about Rosalina, which she does. Not waste time freeing animals and finding a magic code breaker which never ties back into the main plot.

While I agree with you in spirit, I don’t think Mario Galaxy is what you need to worry about. It’s clearly made by a team who cares about the source material, even if the plot is cut and dry. There’s some great visual gags; I love when the koopas go on the lava roller coaster and come up as skeletons. And Starfox blaming his ship malfunctioning on his engineer being a frog was awesome.
