The superficial take is pretending the hitcher was somehow a character written to show extraordinary abilities to only served the plot. But the logical approach is to think of him as some kind of supernatural, demonic entity from the desert with an origin and mission that is never explained (which is a good thing).

Why's that? There are plenty of instances in real life of unhinged psychos doing crazy shit just because they can. You don't need complex motives in your villain, sometimes it's just about the thrill of the kill.
