Out of universe, there’s either one book, three books, six books or seven books. In universe it gets much more complicated. But basically there’s either one book, or the composite sections with. This could be broken down into 5 real books if we temporarily assume LoTR is only one book. But each one of the other books breaks down similarly. The Silmarillion in particular cannot be said to have just one author.

Then of course, do we count the Yellowskin as a seperate book to the Red Book of Westmarch? I think you have to, because it also influenced the Legendarium. Of course, as this is all in context of the frame story, no one except literalist chads will care.
