"Cuts-Throat Nine" and "The Great Silence" are some awesome spaghetti's. "Two Mules for Sister Sara" is an underrated Clint Eastwood one.But I think you should watch one of the Budd Boetticher westerns with Randolph Scott. The protagonists are all influences on Leone's Man With No Name character and the films are filled with all the charm that should satiate your western cravings.

The whole "capeshit" notion for westerns only comes from spaghetti's and revisionist attempts at creating an "accurate" portrayal of the west by making bloody, kill crazed movies. Meanwhile, traditional westerns are films that showed the human side of the pioneers who settled the West and did so with love. Any murder is the result of a dramatic climax in the story when there is nowhere else to go.

Rust while not good was still considerably more serious and real than most Hollywood stuff in other genres.
