What was the screenwriter thinking?

I like the part where he inhales his own feces

Did either the book or the movie address the fact that the lack of atmosphere on mars makes the surface a radioactive deathtrap that would kill any human before a crop of potatoes could possibly germinate?

Or the fact that the radiation would kill the potatoes too?

mmm, potatoes

Why didn't he ration his ketchup? He squirted like half the bottle in one meal

In the book the radiation creates giant monster potatoes that he has to fight

You're confusing atmosphere with magnetosphere. It has extremely limited protection from solar radiation not from the low atmospheric pressure, but because it doesn't have a consistent global magnetic field.
I don't remember the book addressing it at all. Any colonies on Mars would have to be started in the southern hemisphere under local magnet umbrella zones that will have much lower average radiation levels.

And the exposure levels in rads over time wouldn't curb plant growth. But they will give the people trying to live outside those zones long term health problems. Being there for 2 to 4 years wouldn't be any more dangerous than being in a spacecraft for the same amount of time.
You would have a high rate of birth defects after a generation or two though.
