Aston and Julia both had their own unique take on Gomez that worked for them and the material they were given. Replicating that would be difficult with someone else. Just let Guzman do his own version of Gomez that's its own thing. They're all loosely based on an ancient comic strip from which they all deviate. Enjoy each for their unique qualities.

I like Guzman generally, he’s fun in things like Boogie Nights and Carlito’s Way, but his performance is weirdly off in the show. His line deliveries are slow and stilted like he’s had a stroke, so Gomez doesn’t feel charming at all, which is usually a consistent trait
