What I learned from watching kitchen nightmares is that independent restaurants should have a small menu for two reasons 1) Less food in the freezer the less food spoils before its used 2) small menus means chefs get really good at making the restaurant's small menu better. I live in rural Canada and see many restaurants start and fail because there are not enough customers to survive in a town of 800 people. The restaurant that has been in business with the last 30 years does fish and chips and only fish and chips and its quality is easily 4.5/5 stars.
Tasting History with Max Miller on youtube. He makes ancient roman and medieval recipes and half the episode is a history of lesson about the era that it came from. Very fun.

In the 90s they would air translated episodes of Iron Chef from Japan. As a kid I would tune in every week and would talk to Ms. Chang (my grade 5 teacher) about the episode the next day. She thought it was so cool that I liked that show. She also gave me perfect grades on my poetry so I was already a teachers pet.
For me, it’s Good Eats. Alton is based and the explanations of how cooking actually works was cool. He just started making consistent episodes on YouTube in the same style as Good Eats and they’re pretty great.
