Episode I and II Anakin didn't give him the agency or character to be who he needed to be, and we all probably agree on the Clone Wars show. Anakin is, to me, better as a plot piece than a character. He is a condemnation of the state of the Republic. He only needs to get that across, he doesn't need to do anything but try to break free. For Luke, I'm thinking of his post-Return stuff. The first trilogy did him well, but a lot of his character is developed in how he rebuilds the order. The trilogy is him learning the lessons he needs to learn, and the EU is him acting on those lessons. Those stories aren't necessarily good, but the way he restored the Jedi by basically stripping away everything but the Light is interesting.
