The writers love to have Doom get humbled by Gods and Godlike beings every now and then. Only time Doom can win against him is when the plot gives him unlimited power, like in the arc that the movie is adapting, where Doom is literally God and controls most of reality. My favorite Thor vs Doom fight was Doom making a "Thorbuster" armor out of the Destroyer armor and only losing because he personally wanted to beat Thor in a fistfight while piloting it due to ego. He could have won if he just sent the armor to fight Thor on its own while he guarded the place that was powering it, which was destroyed by other Asgardians while he was distracted and his suit ran out of power mid fight.

He would be unbeatable if he could fix his faults, but that would mean admitting he has flaws in the first place and that goes against his entire worldview. It's why he's such a great villain, he's always so close to winning, but always manages to defeat himself. I love this interaction he has with Mr Fantastic at the end of Secret Wars, and hope the movie finds a way to adapt it. It probably won't be with Pedro Pascal's Reed though, since I don't think he has any real rivalry with RDJ Doom.
