Old republic wozld probably be a better choice, since a lot of legacy stuff hinges on stuff established post destruction of the second death star that hasn't been adapted and also got retconned by the sequels. Old Republic has none of that baggage and ranges from Freedon Nadd uprising to Republic Dark Age offering a lot of freedom and variety in what kind of story you want to tell. But Disney will never do it because you can't put member berries into the Old Republic.
