If it's still pink even when following proper cooking times and temps, then it might not have been properly thawed. I worked at a place where they cooked their chicken breast in an oven directly from the freezer, no thawing, for hours and hours. The chicken breasts were always dry as shit. I taught them the simple technique of running cold water over the chicken to thaw it. Water bill went up a bit and gas bill went way down. Freezer to cooked time was about the same.

you have to add the stock gradually, not all at once.
add a ladleful at a time and wait until the liquid is absorbed/evaporated before adding more.
after 15 minutes taste it to check for doneness. it should be soft but still "al dente".
another important thing is that you have to choose the right variety of rice to make risotto, not every rice is suitable. Buy carnaroli, arborio, vialone nano or at least rice boxes with "risotto" clearly written on it.

Vegas Chef here, the cook had his heat too high and seared the chicken too fast, basically he cooked the dish in reverse, you want to slow cook the chicken in the pan throughout and then turn the heat up high to get that crispy golden brown texture.
Now in reality the cook would have access to a thermometer or cut the chicken slightly to check it himself before having to serve it, these shows always use amateurs who don't work in a kitchen to get those silly reality TV moments.

You can. The problem is that in the US, it's generally accepted that chicken has a salmonella risk. In other parts of the world, it's illegal to sell chicken that has salmonella. Doing that here would mean companies have to pay to test their chicken for salmonella. It would also mean they can't keep chickens in tiny cages stacked on top of each other so the bottom cages are smeared in shit. Good luck trying to change that though when someone like Foster Farms will just pay politicians to not enforce policies that would make our food taste better

Actual answer: chicken is much more porous than beef so bacteria can much more easily permeate the meat. Thus chicken needs to be cooked through in order to kill all the bacteria. Beef on the other hand can be cooked on the 'outside' only and still be safe to eat because the bacteria are much less likely to have made it inside.

the solutions are cut/pound a thinner piece of chicken, use a lower heat overall, pop it into a low oven for a bit (the more standard for restaurants with a high throughput but needs the most watching since overcooked chicken is dry and terrible), baste it in a pan sauce for a while that slows down the outside cooking, or, if it's close enough to done, just let it rest
But you can tell those pieces aren't done just by how light the one on the left is, he barely even touched the underside. Heat was definitely way too high, should be 4-5 minutes per side at least and it looks like he didn't even hit that.
