Jellyfin. I have a 20tb hdd, about 18tb full + second backup 20Tb that I update every few months but leave in cold storage unplugged. I stream remotely using tailscale and jellyfin. In network I have Jellyfin on all my tvs. I used to use Plex, but since they decided to charge for remote streaming I dropped it. Their app was slow as fuck too, Jellyfin is better.
Right now I'm playing one like this ;)

Plex just werks. I never updated it and I can still remote stream from my seedbox for free. Jellyfin is a buggy nightmare.
