The entire film is being told from the point of view of the sheriff. He's telling this story to various people. Everything you see is colored by his biases and naivete. Llewelyn did not go back to the site of the drug deal to give someone water. He went back looking for more loot. We only see Llewelyn as a lovable rogue with a good heart because that's the only way the sheriff could rationalize him and his actions in his mind. He insisted on taking the money, abandoning his wife, and fucking that slut at the motel because he's a piece of shit.

The reason why he lost his aura and got killed like an NPC offscreen is because he nearly bled to death and had Mexican blood transfused into his body in a Mexican hospital which made him biologically non-white (Mexican) a condition that could last for at least 3-4 months, or however long it takes your own body to regenerate blood and in that time he could no longer be a protagonist in story rooted in the Western canon.
