The T-1000 was malfunctioning, and even if you discount the special edition (but why would you? It's the better version) there T-1000 knows that it's previous attempts at fooling John failed, it might not know exactly why, but it knows they did. A big part of fooling someone relies on them not expecting to be fooled, so it tried torturing Sarah to either A. call to John or B. possibly make her cry out in pain enough to draw him out. The 800 attacks the 1000 and gives Sarah a chance to retrieve her shotgun and escape so the 1000 goes to the back up of trying to imitate Sarah, which it fails to do successfully, even before John notices the glitched feet he's wary enough to get too close.
The 1000 is a very advanced infiltrator, but it's not infallible.

Calling for someone means to call and bring them to you, but just calling to someone means that they don't have to travel to where you are they could just call back. By calling to John either he will return, or he will just respond which gives the 1000 a direction to move in, hell even the way Sarah calls could indicate a direction he might be.

Maybe, but there weren't many scenes where he got close to them. First one was at the Galleria, second one is psych ward, where he had to move through the closed fence (which meant he'd be identified anyway). Last was the helicopter chase where he actually did look different, but was still identified by Arnie because it was obvious no one else would be following them in a helicopter flying so close to the ground.

He knew simply copying her wouldn't work because they know he can mimic anyone. Therefore the more reliable way to lure out John assuming he could see them from somewhere hidden is to use Ssrah as bait. If he killed her outright John would flee. By keeping her alive and wounded, he had the chance to lure out John and also ensure John wouldn't leave the area since Sarah would be a hostage.

I've got one that's bothered me since it came out
Why is the T-1000 "evil"?
An element of the first Terminator that was so compelling was that he was really robotic, as in he didn't even have any villainous qualities. They really nailed this, he didn't hate Sarah, he wasn't mad at her, the murders weren't some weird sublimated sex thing. He was a bipedal Tomahawk missile, and he had exactly as many feelings and desires as one.

As a movie concept goes, this is quite interesting and unique. The T-1000 is a much more generic villain in his characterization, where he's kind of a seething, sadistic bitch. I feel like that takes something away from the movie because almost every "slasher" movie is like that.

The behind-the-scenes and expanded lore reasoning is that unlike the 800 series the T-1000 is a genuine AI like Skynet itself, it thinks and has some semblance of emotion (or whatever the machine equivalent is), and that Skynet was actually "afraid" of the T-1000 because it might turn on Skynet. So the best it could do was program in an intense hatred of humans to try and keep the 1000 on task. This is why the 1000 is willing to kill people with little to no provocation, even when it's irrelevant to the mission, like the truck driver toward the end, and also why it seems to take some kind of pleasure in not just killing, but killing in torturous ways. It would have been more efficient to kill the security guard by lancing him through the brain itself, instead it went through the eye socket and made him suffer for a little bit.

The mythos in T1/2 was really fucking good.

With T3 onwards I get the impression that the writers started to picture Skynet as an army of evil robot skeletons. The plots on those films make more sense when you look at it from this lens rather than tying in to the previous films. I think the absolute worst I've seen is that Terminator in Genysis that's driving a fucking truck. A human truck with human controls. So fucking stupid. And it's a huge part of the plot.

It's not as dumb as you think. In a war where everyone has access to jamming and other things that could absolutely derail a remote truck, it's easier to just use the designs that already exist (truck with pilot) and program a read-only t-800 to drive it from a to b. I don't know the plot point of the movie but I can see this being a thing. You can't remotely reprogram a read only terminator (in the T2 directors cut you need to basically remove the chip and change it. Good luck if it's trying to murder you) and also now theres a killing machine in the driver seat.

The Terminators on guard have this little slapstick reaction where they wordlessly go "Yeah this guy seems legit WAITAMINUTE HIS EYES AIN'T GLOWING"

Because then I have to keep taking the brain out and it's vulnerable. If I have a terminator drive it, I have a human shaped creature inside that can not only drive but had specific instructions inside it about where to go that was uploaded with hardware rather than remotely. He also has the ability to get out of the trruck and kill rebels, remove road obstacles, fix the truck, and in the vent of a breakdown it can't fix, defend the truck till it radios for help.

As directors-cut only ideas go, I really like the concept that he DIDN'T no-sell this, it hurt him fucking bad, almost as bad as Kyle's pipe bomb did the original Terminator
It changes the whole context of the third act and sorta takes the plot hole out of OP

OP, the reason the T-1000 doesn't just kill her is because up until that moment it had apparently never heard her voice. So it needed her to say something to replicate it. Otherwise it could have just killed her then and there!!!FACT!!!

The T-1000 is more sadistic than the T-800 ever was. He is shown often toying with his victims before killing them.

It also cannot properly mimic emotions in its intonation so it was far more efficient to have the sound of true maternal pain to get John to act irrationally giving away his position.
