armor that can deflect bullets but not blaster bolts is common enough in this universe that conventional firearms are rare. they exist (they're called slugthrowers) but they don't see much use. the other thing is that ammo for slugthrowers is expensive compared to blasters. also blasters can easily store hundreds of shots before needing to reload. there's not much reason to keep around slugthrowers just on the offchance you need to fight a jedi.
