In the Sarah Connor Chronicles, I don't think they ever use thermite on an active Terminator, but they use it regularly to dispose of ones they've killed

The most expeditious way to take one out seems to be to incapacitate it in any other way (pin it against a concrete wall with a truck, electrocute it which might buy you a minute before it reboots, get another Terminator to wrestle it to the ground and restrain it, etc) and then rip its scalp open and pull its CPU with a pair of pliers
That's still really fucking inconvenient and dangerous so I guess that speaks to how durable they are

Once they did manage to just yeet one with a Barrett rifle and AP rounds. Still took two shots, first one ripped half his head off and second one dropped him.

I've been rewatching SCC since I missed a bunch of episodes in S2 the first time around. They manage to put down a Terminator with regular arms fire, Cameron blows one's head open with a shotgun but she's presumably packing some bullshit AP shells in it or something, and then John puts it down after it's been crippled with a regular desert eagle.
They still have to remove the chip and smash it to finish it off, so presumably it could self repair with enough time especially since that specific one's come back from a lot worse

I still like the Terminator Resistance game where there's smaller Skynet drones and other bots that can be hurt with regular bullets but that shit just bounces right off an endoskeleton unless you're putting hundreds of bullets into one, and by that time you're generally fucking dead.
Shotguns stun them for a second or two so you can run away but generally anything less than explosives or a plasma rifle is just pissing in the wind.

The key difference there is that when Sarah or John evade a Terminator in earlier movies, they do it themselves or they get helped by someone, they don't have the Terminator grab them and then fucking let them go.
There's no point where the ruined endo at the end of T1 grabs Sarah and throws her across the factory, she's constantly keeping ahead of it because the audience knows if it catches her it's going to kill her. Salvation literally does this in the opening scene with the damaged T-600 and it ruins any sense of tension because now you know the characters are in the timeline where Skynet programmed them wrong as a joke.

They don't so much let them go as they do throw them into things, and it's like okay I get it when you're just going to slam a guy into a wall or something breakable in an enclosed space like DON'T MAKE ME BUST YOU UP MAN but Salvation just has so many fights where it happens in a wide open space and it's just an excuse to drag the fight out because obviously the hero can't die. It's especially egregious in the first scene out in the desert where there's the crippled Terminator with no legs that throws Bale around and then has to crawl after him to go and do it again.

He does charge into Arnie once or twice to try and fight him so the implication there is that he's trying to fight back and getting manhandled. Again, it's an enclosed space in close quarters, it makes sense that shit's getting smashed up.
