It's simple genetics.

Mutations give individuals a better or worse chance of survival.

Over time the mutations in the individuals that survive become more common.

Mutations that were once beneficial may become a hinderance as the environment changes.

Other mutations that were once a hinderance may become beneficial for the same reason.

It doesn't happen overnight.

This can take tens of millions of years.

It's not fucking rocket science.
