He told the writers room what stories he wanted to see and he had the final say on everything. He was the boss, it was his show and he ran it. Just like on Empire Strikes Back and Jedi, he had others doing day-to-day production duties and writing screenplays of the stories that he'd laid down. Sometimes he would get hands on with the editing. He would then review and edit scripts and watch dailies (pre-visualized raw animation), and when everything is to his liking the episode would go into final post-production stage. Everything that you see in The Clone Wars movie and the first six seasons either came directly from him or was consciously approved by Lucas down to very small details. Like he said many times, it was his work and a part of his Star Wars world that he considered equal to his movies.

George was not constantly obsessed with canon or the minutiae he would make decisions based on how he felt.
