You're not wrong. The most interesting thing about the first couple movies is the setting and aesthetic. It's dark, remote, cold, empty, lonely, low tech space travel. It takes forever to get anywhere or for any help to get to you. That's rare in most scifi put out since it's not as exciting as something like star wars. But all the directors miss that and try to make Alien movies like other generic scifi just with xenomorphs and that removes everything that made the originals interesting. Alien Isolation brought that back and fans loved it, which is why they made Romulus and Alien Earth more like that again. But they still fucked it up, such as not having androids be fairly weak like Ash and Bishop and instead turned them into super strong terminators that can solo a dozen xenos.

It's not retarded if you think of the xeno as analogous to a morphing insect, like a butterfly (with the additional facehugger stage at the beginning, but it becomes more analogous after that).
Caterpillar hatches from an egg, it later has to sit in a chrysalis to turn into its final form. The wall thing is like a chrysalis.

Well the scientists should have known better and these people were shown to be kind of retarded colonizers, so it actually fits better thematically. If we want to be "realistic" the main problem would be finding a planet with an atmosphere that's breathable for humans in the first place, since even trace elements can be lethal. We don't have much to fear when it comes to alien bacteria though because the odds of evolutionary similarity is so low. In fact there's a fundamental problem of chirality ("handedness") in the basic structures of life that means we could see a whole ecosystem that's (by chance) got its building blocks reversed, meaning we could never (and they could never) utilize and break down anything from that world. No microbe could decompose your body, anything eating you could actually die from some bizarre interaction with inverse elements.

But then the black goo is pretty much magic, and in the Prometheus world many (all?) worlds share an origin.

This on the other hand is not very complex at all. They collected grains, roots, berries. Putting things together makes it taste different. Mushing it makes it different. Some combinations better, some worse. You have water, always. Make gruel first. You're already cooking with fire, try putting a gruel cake next to the fire, it hardens. It's kind of nice.
