Can the Thing form acid resistance? Then it’s just a matter of brute force. If the Blob is truly one big giant cell, then it’s probably not something the Thing can assimilate.

The thing disintegrates flesh without taking on any of the characteristics of the flesh being consumed so there's no reason to believe the thing would be able to do anything to it.
