It’s unlikely that Yoda or Obi Wan ever taught him anything more than the fundamentals of Form 1 Shii-Cho, along with some defensive velocities from Form 3 Soresu, and some basic acrobatics from Form 4 Ataru, both of which we briefly see Luke training in. By this time, Luke had access to lost Jedi and Sith holocrons and had met many former Jedi who came out of hiding (all of whom were good friends). By this point in the story, we can assume Luke was familiar with, without being expert in, all main forms. I think we can reconstruct this from context clues. Let’s get the obvious out of the way.It’s not Jar’Kai technique. Luke has elected only to use one single bladed lightsaber in both hands. Ben’s lightsaber is right there for the taking, and Luke clearly refuses to take it.

Niman is a mix of Forms 1 through 5, so it’s hard to be sure. It could be either variant of Form 7. Juyo or Vaapad. Vapaad most likely ended when Jedi Master Mace Windu fell out of a window. But Juyo uses anger to power unpredictable strikes, and you have to be angry to attack your sleeping nephew, which he will find unpredictable.
