Jazz is great and the one thing Lisa is right about. What an interesting form for music and musical exploration. When done well, a revelation. People should dig jazz more, it's really fucking cool sounding and hip. Listen to Coltrane or Brand X or Weather Report. Jazz rules.

The joke would work better if the woman was playing some highly experimental free form/improversational jazz, but this is just a pretty basic chord progression.

The joke is just meant to be a slight jab at the kinds of platitudes you'd hear people that are super into experimental jazz music would say.

Stuff like "it's about the spaces between the notes" or "the silence is as much as part of the music as the music itself"
