Indian food in Japan was associated with British food for a long time. Japan is just overly xenophobic that this show really didn't understand the different types of cuisines of the world.

You should watch the Yōsei Watanabe episode. He makes amazing tex mex style foods and spoilers, loses hard in some of the most scathing points differences. Japan was not ready for spicy rice and savory beans.

I remember one of the challengers teachers saying to the effect there's 3 kinds of cuisine, Chinese, Japanese and European. This guy ran a school. Really you can separate cuisine types into.

They never had an Greek chefs on to highlight the difference and expansion of what "Italian" could be.

A challenger specializing in SEA foods like Thai, Indonesian, Malay, Vietnamese, etc, would be more competitive with Japanese chefs since those all prioritize fresh ingredients, preparations which would have been associated with aristocracy and foods only an emperor would have access to

tbf, I.C. had cuts all the time, and you'd see them bleeding. Today it would never pass, and they'd probably just CGI it out; but back then, it's not like they'd just stop the show for a few days/weeks while it healed and re-shoot. On with the show!
