Did they all just dig holes in the sand and drop turds and then cover it up like the island was just one big cat box? Or did the professor build an outhouse? if so, why not ever show it?

It's a tropical island. They could relieve themselves almost anywhere and within a day or two, the local ecosystem will have broken the waste down. It's polite to not take a dump in the middle of camp or on a trail but other than that, anywhere is fine... just watch out for snakes.
