I'm not a power user, but I have used both, and ultimately stuck with Plex for a while now.
Jellyfin asks more of you because you need to maintain metadata and preview media yourself. I don't mind that and have still been doing that for when I eventually switch back over. What made me drop it for the time being was the terrible Roku app, which is more of a Roku problem than an actual Jellyfin problem. I was having specific encoding and playback issues on my TVs. I think the app has since been updated, but I haven't gone back yet.
Basically, it's not as plug and play as Plex is so I'm sure a lot of people get turned off.

This happened when about half the websites on the internet's SSL certifications went down because they were all set to expire on a random day way into the future but many sites didn't bother to fix it in advance like Plex. Damn that's absurd. What a wild price hike. They really want people to pay a subscription to host their own content on their own hardware using their own internet streamed to their own devices. That is the only way such an absurd price hike makes sense. I don't think just software support is worth such a price anymore. If I didn't already have a lifetime pass I would switch to jellyfin.
