I'm glad this thread is still up and actually based people are discussing canolis.From what I'm reading the canolis should have ricota cheese. I did not know that. I can understand how that would taste different with chocolate, but I'm reading a recipe that says traditionally it the ricotta is made into a mix with citrus zest, vanilla, and cinnamon. That would completely change the flavor to something actually delicious and interesting. I can imagine both lemon and orange zest giving it a delicious flavor.The supermarket one I got was just a cheap dough with some kinda of sugar frosting filling. Not a whipped cream.
