It's about arrogance.

The Xindi, the Suliban, these were new races created specifically for Enterprise, destruction was always meant to be a part of their stories, as dictated by the people who directly created and brought them into the lore.
Iconia, El-Auria, Charon, the destruction of these worlds is a part of their familiar story, part of beloved and celebrated canon from the moment of their inception.

But the Klingons, the Romulans, and the Vulcans were not destroyed by the person who created them. They are important narrative tools for Star Trek, familiar and beloved by the fans; they can be used antagonistically or to represent certain aspects of ourselves. It's undeniable that all 3 races are an important part of the intellectual property of Star Trek.
To arbitrarily change them as part of some cheap destruction storyline is just wanton disregard for the tools at your disposal as a writer. It's taking three Stradivarius violins and tossing them into a dumpster so you can use an AI clip of a violin's approximation.

This casual, flippant disregard for the IP and the fans is just sheer fucking hubris, if you ask me, and is a big part of every terrible adaptation that Hollywood has made.
