Lords generally had a retinue of knights they kept around for security reasons, tournaments, or war. They were paid with room and board with a little extra on the side to keep them loyal.The whole hedge knight concept wasn't really a thing in Europe since somebody was usually always hiring. Hedge knight in GOT are more like ronin from Japan where they would wander around doing odd jobs till they found work or turned to banditry.
