The time consuming part is putting it all together in working order. A starship is much larger and more complicated. Even if the entire process of assembly was handled by automation, and every part was replicated, it would still take a long time and the time taken would increase exponentially the larger you made each ship and ship building facilities/yards would also have to increase massively to accomodate larger ships.
