Mario can be thrown into just about in genre and just works. Also helps that his design has been consistent ever since mario 64 with little to no variance and no shitty redesign no one asked for.

There is a perfect line of pedigree from Super Mario Odyssey & 3D World, and Super Mario Bros Wonder all the way back to Super Mario Bros(obviously Miyamoto is a common factor going back to DK '81 but that's just cheating, honestly). The people that made older games made sure to train successors. Miyamoto directs Super Mario, then Yamauchi lets Koizumi make a team in Tokyo to make 3D Mario games(if just to rush something out the door for the Gamecube), Koizumi trains Koichi Hayashida to work on Galaxy and 3D Land, Hayashida taps Kenta Motokura who does 3D World and Odyssey. Maybe we'll see who Motokura's successor will be with the next 3D Mario on Switch 2.

NSMB has been known as the crucible for Nintendo to train its burgeoning talent which is why there's so many different directors and designers working on it who often go on to other jobs, e.g. Masataka Takemoto who directed NSMBU and NSLU and went on to do stuff like Good Job of all things, but they still take the job seriously when cultivating their design sentiments.

Ironically with the Sega-to-Nintendo pipeline, Nintendo probably has more people that worked on older Sonic games working on current Mario titles, than Sega does working on Sonic games.

Compare that to something like Microsoft having to build an entire team from scratch because they retained basically nobody from Bungie to work on further Halo games. Or how after all the carnage of 7th gen IP auctioning and buying, Toys for Bob being bought by Activision and sent to work on Crash and Spyro.

Biggest thing is that Mario doesn't try at all to be cool or interesting. The gameplay speaks for itself. Meanwhile other mascot games tried way too hard to be "cool" and now they're dead.
