Glossy every time you're putting a protector on it. It sticks better and there are less light blocking elements.
I don't use protection since I'm an adult.

IPS and OLED panel types while matte and glossy refer to the glass that is on top of them. Glossy screen usually looks nicer but matte handles reflections better.
