Got into Etrian Odyssey lately and it's such a shame that this entire franchise lived and died on a handheld console line. The HD remasters on PC just don't feel right without a stylus in hand and I can't think Atlus has much interest in reviving the franchise when Persona and SMT are more popular than they've ever been.

Is Monster Hunter fun in single player? Hacked my 3DS a while back and I've been looking for more action oriented games since it's basically a JRPG machine as it is right now. KI:U was amazing.

Just know that in 3U, 4U, and GU I'm pretty sure the monster's strength doesn't scale per player, it scales based on if you're doing a hub or village quest, so you'll be fighting much stronger monsters solo in the hubs, which is the only place you can do G-rank quests in.
