It's not just stats. How about unique quests, dialogues, romance options etc. etc.
"Custom protagonist" now means your dude will be called 'they', and that's it.
The neutral tone and story that means to fit both, just outright kills any authenticity.

Mass Effect has different romances for male and female. I think New Vegas has a couple different quests for male and female, it definitely has different dialogue.
